My brother and I remember this from our childhood.

What a beautiful day for a picnic
What a beautiful day for a lark
We will frolic all day
In the happiest way
And we won't get home untl dark.

I found this variation, but no info re authorship:

What a beautiful day for a picnic!
What a picnic-ful day for a lark!
We'll frolic all day,
in the merriest way,
and we won't get home
before dark!
