My teacher recently made us write 3 1-2 page poetic journal entries of our choice but i don't quite understand what she means by journal entry? Could someone give me some examples or explain to me what this is.
Also any good 'easy' poem ideas would help to.
I wouldn't know what she means by that either. To me it sounds like she wants you to write a journal in verse.
But I suggest you ask her. She is probably the only one who is really sure about what she means. Anyway, it is not an obscure poetic term we can help you with.
Here are a few suggestions, in case your teacher says, "It's up to you."

ive also been givin the task to write a specific journal entry to Life is fine by Langston hughes , if anyone could give me some ideas about how people would relate to this poem it would help a bunch ,
Life is fine
---Langston Hughes
I went down to the river,
I set down on the bank.
I tried to think but couldn't,
So I jumped in and sank.
I came up once and hollered!
I came up twice and cried!
If that water hadn't a-been so cold
I might've sunk and died.
But it was Cold in that water! It was cold!
I took the elevator
Sixteen floors above the ground.
I thought about my baby
And thought I would jump down.
I stood there and I hollered!
I stood there and I cried!
If it hadn't a-been so high
I might've jumped and died.
But it was High up there! It was high!
So since I'm still here livin',
I guess I will live on.
I could've died for love--
But for livin' I was born
Though you may hear me holler,
And you may see me cry--
I'll be dogged, sweet baby,
If you gonna see me die.
Life is fine! Fine as wine! Life is fine!

i like this poem. its about not giving in to the easy way out, suicide.
Suicide is easy? Nuh-uh.
Resume
Razors pain you;
Rivers are damp;
Acids stain you;
And drugs cause cramp.
Guns aren't lawful;
Nooses give;
Gas smells awful;
You might as well live.
